This ambitious project is the latest venture from George Bukhov-Weinstein and Ilya Demichev, the duo behind the Wild Group. With a proven track record in the hospitality industry, the pair previously established the renowned Goodman steakhouse, the surf-and-turf concept Beast, and the Japanese-influenced Wild Izakaya. Having also played a pivotal role in the founding of Burger & Lobster before parting ways with the brand in early 2025, Bukhov-Weinstein and Demichev are now applying their expertise to the pub sector.

The Albatross is housed in the former Commonwealth Bank of Australia building, a historic site that has been meticulously reimagined. The expansive two-floor venue is designed to accommodate a significant crowd, boasting 200 seats, a 400-person standing capacity, and an exclusive 14-seat private dining area.
